Ingredients
2 large English  cucumbers (about 1.5 lbs), peeled and roughly chopped
1 cup freshly squeezed  lemon juice (from 4-6 large  lemons)
1/2 cup granulated sugar (or natural sweetener of choice, adjust to taste)
4 cups cold filtered water, plus more for blending
Ice cubes, for serving
Lemon slices, cucumber ribbons, and fresh mint sprigs, for garnish
Instructions
Prepare the Cucumber: Wash, peel, and roughly chop the cucumbers. Place the chopped cucumber pieces into a blender. Add about 1/2 cup of filtered water to help with blending.
Blend the Cucumber: Blend the cucumber and water mixture on high speed until it forms a smooth puree. This may take 1-2 minutes, depending on your blender.
Strain the Cucumber Juice: Place a fine-mesh sieve over a large pitcher or bowl. Pour the cucumber puree through the sieve, pressing down on the solids with a spoon or spatula to extract as much liquid as possible. Discard the remaining pulp (or save for compost/other recipes). You should end up with approximately 2-2.5 cups of fresh cucumber juice.
Combine Ingredients: To the pitcher with the strained cucumber juice, add the freshly squeezed lemon juice and granulated sugar.
Dissolve Sweetener: Stir the mixture vigorously until the sugar is completely dissolved. Taste and adjust sweetness if desired, adding more sugar a tablespoon at a time if you prefer it sweeter, or a splash more lemon juice if you prefer it more tart.
Dilute and Chill: Pour in the remaining 3.5 cups of cold filtered water. Stir well to combine all ingredients thoroughly.
Chill and Serve: Place the pitcher in the refrigerator and chill for at least 1 hour. This allows the flavors to meld beautifully and ensures a truly refreshing drink. When ready to serve, fill glasses with ice, pour in the Fresh Cucumber Lemonade, and garnish with lemon slices, cucumber ribbons, and fresh mint sprigs.
Cooking Tips and Variations
For the freshest and most vibrant flavor, always opt for fresh, ripe lemons and crisp, firm cucumbers. The quality of your ingredients will directly impact the taste of your lemonade. English cucumbers are preferred as they have fewer seeds and a thinner skin, resulting in a smoother juice. If using standard cucumbers, you might want to remove the seeds before blending.

Sweetness is a very personal preference. The recipe calls for 1/2 cup of granulated sugar, but feel free to adjust this to your liking. For a less sweet version, start with 1/4 cup and add more gradually. If you prefer natural sweeteners, honey, maple syrup, or agave nectar can be excellent alternatives. Start with a smaller amount (e.g., 1/4 cup) as they tend to be sweeter than granulated sugar, and adjust to taste. For a sugar-free option, you can use a sugar substitute or simply omit the sweetener entirely for a more tart, spa-water like beverage.
